A hard thing for me to give up when I went vegan was my breakfast food. Breakfast food was my ish. I looked forward to the weekend where I had time to whip up an omelette or some waffles and watch some morning cartoons. At first, I thought I had to mourn those mornings when I switched my diet, but how wrong I was! Tofu works as a great substitute for eggs and you don’t even need eggs to make pancakes/waffles. Who knew?! Here are some of my favorite breakfasts to make for myself when I have the time to indulge.
